
Foraged Fruit Compote

This simple compote works with whatever you've found: blackberries, elderberries, wild plums, crab apples, the lot. Chuck it on your morning porridge or ice cream.
Ingredients
• 400g mixed foraged fruits (blackberries, elderberries, crab apples, etc.), washed
• 2-3 tbsp sugar (adjust to taste and tartness of fruit)
• 2 tbsp water
• 1 tsp lemon juice
• Optional: cinnamon stick, star anise, or vanilla pod
Method
1. Place all ingredients in a saucepan.
2. Bring to a simmer over medium heat.
3. Cook gently for 10-15 minutes until fruit has broken down slightly but still has some texture.
4. Remove from heat and allow to cool.
5. Store in the fridge for up to a week.
