
Elderflower Cordial
Not just for the posh folk — this refreshing cordial is dead easy to make and keeps for ages. Perfect for those summer days when you need something proper refreshing.
Ingredients
• 25-30 elderflower heads, shaken to remove insects
• 2 unwaxed lemons, sliced
• 1 unwaxed orange, sliced
• 1.5kg sugar
• 1.5 litres water
• 50g citric acid (available from pharmacies)
Method
1. Gently rinse the elderflower heads to remove any dirt or small insects.
2. Bring the water to a boil in a large pot, then dissolve the sugar to create a syrup.
3. Let the syrup cool slightly, then add the citric acid, stirring to dissolve.
4. Place the elderflower heads and sliced citrus fruits in a large, clean container.
5. Pour over the syrup, stir gently, cover and leave to steep for 24 hours.
6. Strain the mixture through a muslin cloth into sterilised bottles.
7. Seal and store in a cool place. Once opened, keep refrigerated.
8. Dilute with still or sparkling water to serve.
